Apple S’mores Recipe

Apple Nachos

I am recording a fun show today about Holidays, Friendships and Traditions.  I think you will enjoy it but more about that later.  I am sharing a quick snack that I hope you will enjoy – Apple S’mores. You peel, core and slice apples.  This one make is very easy (so my niece says), I am hoping for lessons later today!  Then you just layer the apple slices and top with marshmallows, caramel bites and crumbled graham crackers. This Sunday listen to Adventures In The Kitchen radian on KKLA 99.5  Joy Creel Liefeld and Deanna White.

Cookings Tips: How To Freeze Waffles (Apple Waffles)

apple waffle

Lately I seem to be sharing breakfast recipes.  It has been so busy and weekend mornings have been my time in the kitchen.  Until last night when I cooked the first recipe from a much anticipated cooked…but more about that tomorrow! I loved Eggo Waffles growing up.  I’d pop one in the toaster for breakfast.  These days I make my own frozen waffles because they taste so much better and are very cost effective Apples are everywhere right now so I thought “how good would they be in [...]

Strawberry Nectarine Crumble

strawberry nectarine crumble

Before I share this Strawberry Nectarine Crumble with you I want to share about my weekend. I went to the most amazing conference this week.  She Speaks is put on by Proverbs 31 ministries and equips writers, speakers and women in ministry.  Ann Voskamp was the keynote speaker on Saturday night and talked about One Thousand Gifts, her New York Times bestseller.  Both her writing and speaking are beautiful.  It was a reminder to stop and be thankful no matter what are circumstances are; to find the beauty in the simplicity of our days. She dares us to live our [...]

Arugula Mango Salad with Orange Honey Vinaigrette

Arugula Mango Salad

This Arugula Mango Salad is a delicious lunch for a spring day.  I find that since I am not working and home more I have been able to eat healthier.  Salads are becoming a lunch time staple and last week I made one with items I had sitting in the refrigerator. The vinaigrette is one you can make to your preferences.  Add more honey to sweeten, more olive oil for a creamier dressing or less for lower calories and with more of a tang to it.  If you don’t have champagne vinegar you can use white balsamic vinegar. Last fall [...]

Lime Angel Food Cake with Strawberries and Lime Mascarpone

Lime Angel Food Cake

I don’t know why it took me so long to share this cake with you. If you visit here regularly you know how much I love all things lime so when I came across this recipe for lime angel cake by those guys at Baked, I had to try it.  The name angel food cake came about because of its airy lightness that was said to be the “food of the angels.” As a little girl we would have angel food cake, especially in the summer, at family gatherings. These days cooking desserts and having them sit around the house [...]

Apple Cinnamon Sugar Pancake

Apple season is here.  One of my favorite fall breakfasts is an Apple Cinnamon Sugar Pancake.  It is an oven baked pancake full of apples and dusted with brown sugar cinnamon on top.  I first made this in 2008 but thought it was time to share it again. Growing up my family would go to Oak Glen each year.  There are miles of orchards where you can pick your own apples and buy fresh homemade cider.  The little town has cute speciality stores like the Oak Glen Curio Shop. Law’s Oak Glen Coffee Shop still serves apple pies that people [...]

Rustic Grape Tart

It was the hottest week ever here in Southern California.  Really it has never been hotter in California than earlier in the week.  Did I mention my car air conditioning broke?  It was 110 degrees.  I was happy to jump a plane to New York and escape the heat. Yet, I still turned my oven on to make this yummy grape tart I have been dying to try for awhile now. This weekend at my produce market they had this amazing red and black grapes calling to be roasted. In my air conditioned home I spent the evening baking. I [...]

Cantaloupe, Red Onion and Walnut Salad

I discovered the recipe for this Cantaloupe, Red Onion and Walnut Salad while doing a little menu planning for a lunch this weekend.  Since I was working from home I decided to make this for lunch today.  With our heat wave going I love being able make something without having to turn on the stove or oven. This is a brief post but I wanted to share this with you before the weekend.  This salad would be a great one to bring to a potluck or picnic.  We are celebrating my sister in law’s birthday tomorrow.  How are you spending [...]

Strawberry Shortcake Cookies

Do you love strawberry shortcake? These cookies are little bites of Strawberry Shortcake.  I found these gems on another blog and had some strawberries in need of cooking.  The fresh taste of strawberries bursts through each bite.  They are from Marthastewart.com. They are best eaten the day of baking. These cookies would be perfect for a picnic or a barbeque. If you have leftovers heat them up in the oven briefly before serving. This will restore a crispy outside.

Homemade Strawberry Gelato

This summer I have been playing around with ice cream and fell in love with Strawberry Gelato.  Who doesn’t love homemade ice cream and we have great tools to make it at home.  When I am in Italy it is an afternoon treat to sample the gelato from one of the many carts or little shops.  They have many flavors to choose from including Hazelnut, Dark Chocolate, Lemon and some filled with nuts.  Last time I was in Tuscany we found a delightful shop in the city of Greve.  Somehow eating gelato in Italy never adds a pound! This Strawberry [...]
