Apple Cinnamon Sugar Pancake

Apple season is here. One of my favorite fall breakfasts is an Apple Cinnamon Sugar Pancake. It is an oven baked pancake full of apples and dusted with brown sugar cinnamon on top. I first made this in 2008 but thought it was time to share it again.

Growing up my family would go to Oak Glen each year. There are miles of orchards where you can pick your own apples and buy fresh homemade cider. The little town has cute speciality stores like the Oak Glen Curio Shop. Law’s Oak Glen Coffee Shop still serves apple pies that people would stand in line for hours to buy. Another bakery made the most delicious apple cookies. We would have a picnic and walk around the town. They added a petting zoo which my niece and nephews enjoyed.

Apple Cinnamon Sugar Pancake

Serve 2

2 tablespoons butter

2 large eggs

1/2 cup all-purpose flour

1/2 cup milk

1/4 teaspoon almond extract (optional)

2 tablespoons packed brown sugar

1/4 teaspoon ground cinnamon

1 granny smith apple peeled and sliced

Heat oven to 400 degrees. Melt butter in cast iron skillet in oven. Arrange apple over sugar in counter clockwise direction. Sprinkle 2 tablespoons brown sugar and cinnamon over butter.

Beat eggs slightly in med bowl with whisk or beater. Add in remaining ingredients just until mixed.

Pour into skillet and put in oven. Bake 25-30 minutes until puffy and deep golden brown.
Serve immediately.
