Cantaloupe, Red Onion and Walnut Salad

Cantaloupe, Red Onion & Walnut Salad

I discovered the recipe for this Cantaloupe, Red Onion and Walnut Salad while doing a little menu planning for a lunch this weekend. Since I was working from home I decided to make this for lunch today. With our heat wave going I love being able make something without having to turn on the stove or oven.

This is a brief post but I wanted to share this with you before the weekend. This salad would be a great one to bring to a potluck or picnic. We are celebrating my sister in law’s birthday tomorrow. How are you spending this last weekend in August?

Cantaloupe, Red Onion, and Walnut Salad

by Giada De Laurentiis

Orange Vinaigrette
1/4 cup fresh orange juice
1 tablespoon freshly squeezed lemon juice
1 1/2 tablespoons raspberry vinegar
3 tablespoons extra virgin olive oil
Salt and freshly ground black pepper

Combine the orange juice, lemon juice, and raspberry vinegar in a small bowl. Slowly add the olive oil, whisking constantly until the mixture is smooth. Season with salt and pepper to taste.

Salad
1 cantaloupe, cut into 1-inch cubes
1 small red onion, thinly sliced
2 cups arugula
1 cup chopped walnuts, toasted

Combine the cantaloupe, red onion, arugula, and 1/2 cup of the walnuts in a large salad bowl. Pour the dressing over the salad and toss well. Garnish with the remaining walnuts.
