Gluten Free Pancakes and Review of My Fat Dad

Today I am reviewing Dawn Lerman’s new memoir, My Fat Dad and sharing a recipe from the book.

This summer one of my goals was to read more.  I was asked to review Dawn Lerman’s new book, My Fat Dad: A Memoir of Food, Love and Family, I said yes!  I love a good memoir, food and recipes – even better. The book is a memoir of her growing up with a sometimes 450 pound father, always trying the latest fad diet. Her mom, not interested in cooking, ate a can of tuna each day.  It was through her grandmother, Beauty, that she discovered cooking and embarked  on a search for nourishment.

Her father,  was a Mad Man era ad man responsible for creating famous ad campaigns like “Coke Is It” and “Leggo My Eggo”. The book explores her relationship with her dad and her love of food. She had a challenging childhood, leaving her hungry for more. She includes both childhood recipes along with healthy recipes she created as an alternative. Our childhood often shapes our passions, her grandmother introduced her to healthy eating and the beauty of fresh ingredients.

Our times in the kitchen build memories that will last a lifetime. Dawn loved cooking with her grandmother. When she had to move to New York her grandmother promised to send her a recipe card  each week of a meal she would be preparing. Dawn could make it in New York and they could share the experience of  eating the same meal.  I loved that story. That is the power of food.

My Fat Dad

Sunday breakfast was special for Dawn, she and her sister would make her dad breakfast in bed. She has recreated a Lo Cal Gluten Free Pancake, that reminded me of the banana pancakes my nana would make for me. They are easy to make – note this is a serving for 2-3, so double the recipe for the family!

Gluten Free Pancakes and My Big Fat Dad

Course Breakfast

Ingredients

  • 1 mashed banana
  • 1 tablespoon milk or skim milk
  • 2 scoops of protein powder of choice 1?2 cup egg whites beaten till stiff Cooking spray for pan
  • Fresh berries for garnish

Instructions

  1. Mash the bananas and add the milk. Then stir in the protein powder and egg whites. Make sure you beat the egg whites separately until stiff, then fold in. Spray a skillet with cooking spray and pour the batter into the heated pan. When the pancake bubbles, flip and cook until edges are brown. Remove from the skillet and serve with fresh fruit.
