Strawberry Goat Cheese Salad

I spent my weekend wrestling a bbq.  When did it become impossible to find a bbq that was already put together?  After putting it together, taking it apart and trying again, I took a break.  I think reinforcements will have to be called in.

In an attempt to turn my run of bad cooking around I revisited a few tried and true recipes. I first made this salad after having a dinner at my friend Tracy’s.  She had found this in Cooking Light.  The recipe called for a small toasted bread slice topped with goat cheese.  I decided to incorporate the cheese into the salad.

You can cut down a bit on the sugar.  The original recipe calls for spinach but I had mixed greens on hand.

Strawberry Salad with Goat Cheese
adapted from Cooking Light
Serves 6

Ingredients
1/4 cup sugar
2 tablespoons sherry or white wine vinegar
1 1/2 teaspoons sesame seeds, toasted
1 1/2 teaspoons olive oil
1 teaspoon minced red onion
3/4 teaspoon poppy seeds
1/4 teaspoon Hungarian sweet paprika
1/8 teaspoon salt
6 cups spinach or mixed greens
2 cups halved strawberries
2 tablespoons slivered almonds, toasted
1 (3-ounce) log goat cheese crumbled

Combine the first 8 ingredients in a jar; cover dressing tightly and shake vigorously.

Combine the mixed greens, goat cheese and strawberry halves in a large bowl and toss gently.  Pour the dressing over the spinach mixture, tossing gently to coat.  Sprinkle almonds over salad.

    Hi Cheri! This a great summer salad. I work with Chavrie and this it would be just great with our fresh goat cheese log. The tang of the cheese and sweetness of the strawberries are the ultimate combination. The dressing sounds wonderful as well!

    This salad is delicious! I have been trying to replicate a poppyseed dressing that a local gourmet shop makes and haven’t been able to until now! I think it might be the sweet hungarian paprika that makes the difference. The gourmet food store does a few variations on this salad which are also excellent. One is strawberries, blueberries goat cheese and candied walnuts which they call Red White and Blue salad. Another that they serve in the winter is with dried cherries and candied walnuts. Also, sometimes they use a peppered goat cheese which is also great. Thanks for posting this. Now I can make my own anytime I want!
