Roasted Snap Peas for One
Sometimes you want a little something, a little snack. Here is a healthy, quick snack you can make for yourself or a crowd. Try snap peas roasted with lemon, garlic and a pinch of red pepper flakes. Roasting them brings out the flavor but keeps the crispness to the peas.

Ingredients
- 1 cup snap peas
- 1/2 teaspoon olive oil
- 1 clove of garlic
- 1 teaspoon of lemon zest
- Juice of 1/2 of lemon
- Pinch of red pepper flakes
Instructions
- Preheat oven to 400 degrees.
- Toss peas with olive oil, garlic, lemon zest, juice and red pepper flakes and place in a baking pan. Bake 10 - 12 minutes. Sprinkle with sea salt.
