Roasted Snap Peas for One

Sometimes you want a little something, a little snack. Here is a healthy, quick snack you can make for yourself or a crowd. Try  snap peas roasted with lemon, garlic and a pinch of red pepper flakes. Roasting them brings out the flavor but keeps the crispness to the peas.

Cook Time 12 minutes
Total Time 17 minutes


  • 1 cup snap peas
  • 1/2 teaspoon olive oil
  • 1 clove of garlic
  • 1 teaspoon of lemon zest
  • Juice of 1/2 of lemon
  • Pinch of red pepper flakes


  1. Preheat oven to 400 degrees.
  2. Toss peas with olive oil, garlic, lemon zest, juice and red pepper flakes and place in a baking pan. Bake 10 - 12 minutes. Sprinkle with sea salt.
