Happy 4th of July my Adventures in the Kitchen friends! I thought I would share a 4th of July themed recipes I had the pleasure of developing for Pillsbury.com.  Really a dream come true for a girl who still has her first Betty Crocker Cookbook! These are so quick you could run out to the store and make them in under an hour.  The Flag Cookie Tart used Pillsbury cookie dough, frosting and berries.  The kids can help frost and place the berries. Last Friday night I wanted to do a Halloween themed cooking night with my niece and nephews. I also worked all day so I wanted it to be simple.  I found the recipe for Yummy Mummies by Paula Deen on Picky Palate’s blog.  I love her blog. Granola Bars

Last year I tried making homemade granola bars for the first time.  I love the sweet and salty flavors with the crunchy texture.  That weekend I had my first gallbladder attack and ended up with a surgery to remove it a few weeks later. Somehow the foods I ate that weekend prior to the attack just haven’t appealed to me, until now.  I saw these bars on another blog and decided to give them a try. Grilled Chicken and Broccoli Alfredo

This summer my niece has made “pasta with cheese” or fettuccine alfredo, her favorite dish.  Last night I decided to try a light version, inspired by a Cooking Light recipe.  I used bowtie pasta and added grilled chicken and broccoli to make a healthier dish for kids. The lightened version has less butter and substitutes half and half for heavy cream.  In Cooking Light they were able to take 10 grams of fat off per serving.  Their sauce was a bit bland for me so I added a clove of garlic.  The kids, my toughest critics some days, liked it.  [...]

Recently I was contacted by a PR agency asking if I would try out new Pillsbury products.  I decided to do it because i had a few ideas on quick and easy appetizers as the holidays get closer. One of the products was their Pillsbury Pizza Crust and I ended up using this with my niece and nephews to make pizza.  I love cooking with the kids.  It is fun and exposes them to cooking.  They love rolling out the dough, brushing on the sauce and sprinkle the toppings. Tropical Fruit Skewers with Pina Colada White Chocolate Sauce

To round out the dessert table I served a Tropical Fruit Kebab. Fruit is a great alternative to sweets.  These days so many are gluten free or on a special diet so fruit offers a sweet and juicy addition to the menu. This is a recipe that you could involve your children in helping to make. I heavily adapted the recipe using pineapple, strawberries and cantaloupe.  But mango would have been great!
