Sweet Molly’s Cookies
Today I am serving you up Sweet Molly’s; a cookie from my past. There used to be a bakery in Yorba Linda called Sweet Nicks, and they served the best cookie with butterscotch and potato chips. The cookie became so popular that the city named it the “Official Cookie of Yorba Linda”.
Over the last year I have been back in that area often and as I drive by the shopping center where the bakery was, I think about that cookie. Finally I went into action by searching online until I found a recipe I thought might be similar. The cookies are a great balance of sweet and salty.
When I took them over to my niece and nephews I asked them to guess the secret ingredients. They listed everything they could think of and were shocked when I said it was potato chips. My little taste testers determined it was the best cookie ever. Hopefully you will think so too.
Sweet Molly’s Cookies
1 cup packed dark brown sugar
1 cup white granulated sugar
1 cup butter
2 eggs
1 teaspoon vanilla
2 1/4 cups all purpose flour
1 teaspoon baking soda
1 11 ounce bag of butterscotch chips
2 cups crushed potato chips
Preheat oven to 350 degrees.
Cream together sugars and butter in a mixer. Add vanilla. Mix flour and baking soda in a bowl. Beat in eggs and then add in flour mixture. Mix well.
Fold in butterscotch chips and potato chips.
Drop by teaspoon on to cooking sheet and bake for 8 to 10 minutes.
