Blood Orange and Jicama Salad with Passion Fruit Vinaigrette

Ingredients

  • 2 blood oranges
  • 2 cara cara oranges
  • 2 grapefruit
  • 1/2 jicama (sliced into matchsticks)
  • 2 tbsp passion fruit nectar
  • 1 tsp honey
  • 1 tbsp champagne vinegar
  • 1 tbsp lime juice
  • 2 tablespoons olive oil
  • 1/8 tsp salt
  • 1/2 tsp tajin seasoning

Instructions

  1. Peel citrus, removing as much pith as possible, and slice into wheels.
  2. Remove any seeds, layer fruit on a serving dish, and garnish with jicama matchsticks.
  3. Place 8 ounces passion fruit nectar in a small saucepan. Bring to a rolling boil and boil until reduced in half.
  4. Whisk together olive oil, passionfruit nectar, honey, lime juice, and until well combined; taste, adjust seasoning as needed, and drizzle over salad.
