In a small bowl mix 1/2 the chicken stock, chipotle and honey together. Season chicken with salt and pepper.
Heat the olive oil in a ovenproof skillet. Place the red onions and cook for 2 minutes. Add chicken and brown on both sides. Add garlic and half the stock. Let cook 1 minute.
Add the chipotle mix to the skillet and mix together. Place in oven for 8 minutes or until chicken is cooked through.
