Roasted Snap Peas for One

Ingredients

  • 1 cup snap peas
  • 1/2 teaspoon olive oil
  • 1 clove of garlic
  • 1 teaspoon of lemon zest
  • Juice of 1/2 of lemon
  • Pinch of red pepper flakes

Instructions

  • Preheat oven to 400 degrees.
  • Toss peas with olive oil, garlic, lemon zest, juice and red pepper flakes and place in a baking pan. Bake 10 - 12 minutes. Sprinkle with sea salt.
