Summer Squash Saute

Ingredients

  • 1 tablespoon olive oil
  • 1 shallot finely minced
  • 1-2 cloves garlic finely minced
  • 2 zucchini sliced
  • 2 summer squash sliced
  • 1 1/2 cups grape tomatoes
  • salt
  • pepper
  • 1/4 cup shredded Parmesan cheese

Instructions

  • Heat the oil in large saute pan over medium high heat. Add shallots and cook for 4-5 minutes; add garlic and continue cooking 30 seconds more. Place squash and tomatoes in the pan and stir to coat. Cook under the vegetables are tender, about 10-12 minutes.
  • Season with salt and pepper. Top with Parmesan cheese.
