Goat Cheese Stuffed Mini Peppers

Ingredients

  • 4 ounces cream cheese softened
  • 4 ounces goat cheese softened
  • 1 garlic clove finely minced
  • 1/2 shallot finely minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Pinch red chile pepper flakes
  • 10 mini peppers halved with seeds removed
  • 3 tablespoons olive oil
  • 1/3 cup panko bread crumbs
  • 1/4 cup parmesan cheese

Instructions

  • Heat oven to 400 degrees.
  • In a bowl mix together cream cheese, goat cheese, garlic, shallot, salt, pepper and chile pepper flakes.
  • In a small bowl mix together bread crumbs, parmesan cheese and olive oil.
  • Fill each pepper halve with a spoonful of the cheese mixture. Sprinkle with the bread crumb mixture and place on a baking sheet lined with parchment paper. Bake for 20 minutes or until crumbs are browned.
