Spicy Grilled Shrimp
These spicy grilled shrimp are addictive. They might not look like much but these are bursting with flavor. The paste is spicy and sweet with a bit of tartness from the lemon juice. The picture doesn’t really do them justice as all I had with me was my Iphone.
I like shrimp but not necessarily enough to cook with them often. This dish changed my opinion. The sweet and spicy flavors make them addictive. One is not enough.
Summer is right around the corner and time for outdoor entertaining. These could be a main course served with rice and grilled veggies. They could be skewered and served as an appetizer. The paste can be made ahead of time and then add the shrimp to marinate while you make the rest of the meal. This way you can enjoy your company and not have to be slaving in the kitchen.
Spicy Grilled Shrimp
2 teaspoons Hungarian sweet paprika
1/2 teaspoon cayenne pepper
1/2 teaspoon red curry paste
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 tablespoon olive oil
2 tablespoons brown sugar
2 tablespoons fresh lemon juice
2 pounds jumbo shrimp, shelled and deveined
In a small bowl, combine the paprika, cayenne, curry paste, cumin, coriander, salt and black pepper. Stir in the olive oil, sugar, and lemon juice. Add the shrimp and toss to coat. Marinate at room temperature for 30 to 60 minutes.
Heat the grill. Place the shrimp in a grill basket and cook over the heat until the shrimp are just opaque.
