Do you have Olallieberries in your neighborhood? They visit us for a brief few weeks each summer. These sweet little berries can only be found at farm stands. At least here in Orange County, maybe it is different where you are. As soon as I see that sign saying they are here, I am off the street and heading over the bumpy road to the stand.
I searched for a new way to bake something Olallieberries this year and found this lovely recipe. It is a snack cake which is easy to make. There is no frosting, but it does taste great with a dollop of cream. A scoop of ice cream is nice too!
If you don’t have access to Olallieberries, just substitute blackberries or raspberries in the recipe. For the ground almonds I used almond flour from Trader Joe’s. Whole Foods or Sprouts would also carry it.
Mix everything but the berries in a bowl.
Stir in the berries and pour into a cake pan. Bake for about 40 to 50 minutes.
Ollaliberry CakePrint Recipe
- 3/4 cup soft butter
- 3/4 cup sugar
- 3/4 cup flour
- 1/3 cup ground almonds
- 3 eggs
- 1/2 tsp almond extract
- 1 cup Olallieberries
- Heat oven to 350F. Butter and flour an 8″ round cake pan, lining the bottom with parchment paper
- Mix together ingredients except for the berries. Pour into the cake pan, pressing the batter out towards the sides from the center. Top with 1 cup of berries.
- Bake on middle rack 40 – 50 minutes. Remove from oven and allow to cool completely before removing from pan
