My Favorite Watermelon Tomato Salad

This fresh and healthy watermelon tomato salad makes a refreshing, flavorful summer lunch..

Watermelon salads are the perfect antidote to a hot summer day. Here in Orange County, we have been spared the heat that has taken over the nation so far, but this week it is coming! This salad mixes cold watermelon, fresh cherry tomatoes and arugula with burrata cheese will cool you down. I love how the balsamic glaze ties all the flavors together.

What is Burrata Cheese?

Burrata is like a mozzarella ball on the outside but inside you discover a soft, creamy cheese. It is delicious and pairs well with tomatoes and fruit. Add to your favorite pasta dish or top on a freshly cooked pizza. Serve Burrata at room temperature.

How Do I Make a Balsamic Glaze?

You can buy a premade balsamic glaze at many stores including Trader Joe’s but it is easy to make at home. Place 2 cups of balsamic vinegar in a pan and stir in 1/2 cup brown sugar, over medium heat, until dissolved. Bring the glaze to a boil and reduce heat to low. Simmer until the glaze reduces by half. This will take about 20 minutes. The glaze is done when the sauce coats the back of a spoon. Cool and pour into a jar with a lid; store in refrigerator.

Prep Ahead

If you want to make ahead, the best way is to pre-cut the watermelon and tomatoes. Store them in separate containers. You can also make the balsamic glaze ahead of time and store in the refrigerator.

Watermelon, Tomato & Arugula Salad

Light summer salad with watermelon, tomato and arugula and topped with a Balsamic Vinaigrette


Ingredients

Units Scale
  • 1 ball Burrata cheese
  • 1 pint mini heirloom tomatoes (halved)
  • 2 cups watermelon (cubed)
  • 3 cups arugula
  • Balsamic Vinaigrette


Instructions

  1. Break up burrata cheese on plate.  Place arugula in the center. Top with tomatoes and watermelon.
  2. Spoon balsamic vinaigrette over the top.
