Lime Cilantro Vinaigrette with Romaine, Tangerine & Red Onion

Last week we had a day after the 4th barbecue with friends. It was a bit of a potluck so I brought my Summer Fiesta Salad. When I was here a few weeks ago each room had a small plate of Ojai Pixie Tangerines. They were so delicious that I took the rest home.

I had never heard of this brand before so I googled them, of course. They were local to the area until a two of the farmers planted them commercially and started selling them at the local markets in Monterey. From there they started to grow in popularity. There are now 40 local farmers that produce the Ojai Pixie. You can read more about them here.

They were tiny, sweet and seedless. Kids will love these tangerines as they are super easy to peel and no seeds.

At my local farmers market they have had petite red onions that were a little sweeter than regular red onions. I had never seen these before. They were the size of shallots. They were perfect in this salad. I am going back today to see if I can get more.

You could add grilled shrimp or chicken to this salad to make it a main course.

Romaine Salad with Ojai Pixies, Red Onions and Pecans

1 head of romaine
1-2 tangerines,
1/2 large red onion, peeled and thinly sliced
2 tablespoons pecans, toasted
Cotija Cheese, crumbled, optional

On a platter spread out the romaine leaves. Layer the tangerines and onion slices across the top. Sprinkle with pecans. Toss with Lime Cilantro Vinaigrette.

Sprinkle cheese on top if desired.

Lime Cilantro Vinaigrette

1/4 cup cilantro leaves
1 clove of garlic
1/4 cup lime juice
1 tablespoon honey
Pinch of cayenne pepper
1/2 – 3/4 cup extra virgin olive oil
Sea salt & freshly ground pepper to taste

Puree all of the ingredients in a blender or food processor. Chill until serving.
