Flourless Chocolate Dipped Peanut Butter Cookies
I have been on a bit of a cookie roll lately. Peanut butter and chocolate are such a tasty combination. I loved Reese’s Peanut Butter cups as a kids.
I saw a recipe for flowerless Peanut Butter Cookies and decided to give them a try. I made more than a few adaptations but these were super easy. One bowl, a few minutes to put together and into the oven they go. They are small little bites making the perfect little snack.
If I was a SAH they would make a perfect after school treat. My volunteers and co-workers thought they were pretty good too.
Flourless Peanut Butter Cookies
Inspired by Women’s Day recipe
2 cups creamy peanut butter
2 cups brown sugar
2 large eggs
2 tsps baking soda
1/2 -1 cup milk chocolate chips, melted
2 tablespoons chopped peanuts
Heat oven to 350F. Line a cookie sheet with a Silpat or parchment paper.
Place peanut butter, sugar, eggs and baking soda in the bowl of a mixer. Beat on medium speed until blended.
Drop tablespoons of dough onto the prepared cookie sheets. Bake 10 minutes or until cookies are slightly golden. Cool.
Microwave chocolate chips until starting to melt. Stir until thoroughly melted. Dip one end of the cookies into the chocolate and place on a rack over parchment paper. Sprinkle the cookies with the chopped peanuts.
