- 1 bunch of kale, rinsed and dried
- 1 tablespoon olive oil
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/4 – 1/2 teaspoon red pepper flakes
- 1/2 cup parmesan cheese, divided
- 2 tablespoons toasted pine nuts
- 1/2 cup cherry tomatoes
- 1/2 teaspoon lemon zest
- 2 tablespoons lemon juice
- 1 teaspoon brown sugar or honey
- 1/4 teaspoon sea salt
- Pepper
- up to 1/4 cup olive oil
Instructions
- Heat oven to 400 degrees. Line a baking sheet with parchment paper.
- Toss kale with olive oil, sea salt, pepper and red pepper flakes. Place on baking sheet and sprinkle with 1/4 cup parmesan cheese. Bake for 8-10 minutes or until the kale is crisp.
- Place on platter, top with lemon vinaigrette, parmesan cheese, pine nuts and tomatoes.
