- 4 peaches (pitted and sliced)
- 4 heirloom tomatoes (seeded and sliced)
- 4 ounces Mozzarella
- 2 tablespoons basil (torn)
- Cherry Balsamic Vinaigrette
- 1 clove garlic (finely minced)
- 1 tablespoon Dijon mustard
- 2 – 3 tablespoons Cherry Balsamic Vinegar
- 1/4 cup extra virgin olive oil
Instructions
- Mix together Cherry Balsamic Vinaigrette in blender or mason jar.
- Mix together peaches, tomatoes and mozzarella. Toss with vinaigrette. Serve with crusty bread.
