We used to offer a Cooking With Beer menu on our Adventures In The Kitchen team building selections. This Shrimp Scampi with Beer was on it and is a fun twist on traditional scampi. With all the food allergies these days, I ended up dropping it from my menu.It seems fitting to share it with you finally, on Internatinal Beer Day.
I originally created this for Betty Crocker, when I was blogging for them. Well, I actually created it after Jennifer, my hairstylist, told me about her version of this. It sounded delicious. A few days later I set out to create my own version at home.
Shrimp Scampi is usually made with white wine, butter, garlic and lemon. Here we substitute beer for the wine, lime for the lemon and top with cilantro. The Worcestershire sauce gives it that savory kick. If you buy pre-cleaned shrimp, this dish will only take about 20 minutes to prepare.
Do you and your family like it spicy? Add a few drops of your favorite hot sauce to the dish. Serve over rice or noodles to soak up the sauce.

The Best Mexican Beers
I am not a beer aficionado but I like using a Modelo and Pacifica for this dish. Modelo Especial is similar to Corona and is a Mexican beer with a hint of citrus. Pacifica is popular here in California, is a golden lager that pairs well with fish.

Shrimp Scampi with Beer
Mexican beer, lime and cilantro give a fresh and delicious spin on shrimp scampi that can be on the table in just 20 minutes.
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 1/2 lb uncooked medium shrimp thawed if frozen, peeled, deveined (tail shells removed)
- 6 cloves garlic finely chopped
- 3 medium green onions finely chopped (3 tablespoons)
- 1/4 cup beer or nonalcoholic beer
- 2 tablespoons lime juice
- 1 1/2 tablespoons Worcestershire sauce
- Red pepper sauce if desired
- Salt and pepper
- 2 teaspoons finely chopped fresh cilantro
In 10-inch skillet, heat butter and oil over medium heat until butter is melted. Add shrimp; cook and stir 1 minute. Add garlic; cook and stir 1 minute.
Add onions, beer, lime juice, and Worcestershire sauce. Cook 1 to 2 minutes longer, stirring frequently until shrimp are pink (do not overcook). Season to taste with red pepper sauce, salt, and pepper. Sprinkle with cilantro. Serve immediately.
