Class Recipes: Peach Tomato & Mozzarella Salad

Summer brings a bounty of fresh fruit. The ripe juicy peaches and tomatoes combine with mozzarella to create a lovely summer salad. This is a popular salad in my summer cooking classes. Sometimes we grilled bread and use burrata cheese as the base for a Peach and Heirloom Tomato bruschetta.

My goal is to savor summer more this year by entertaining more often. I can get too focused on my to do’s list while trying to build a business. I miss the moments that summer gives us to relax and enjoy life with friends and family.

The Hood Market

This last week we held a grilling class in Brea and next week we are hosting two corporations for culinary team building. I will be holding those at The Hood Kitchen in Costa Mesa. If you live in the area, you must stop by and shop at The MRKT. The Hood Kitchen is a commercial kitchen where so many delicious products are created. There are jellies and jams, chips, honey and so much more. Baked Goods by Brown Bear Eats and chocolate by Valenza Chocolatier. I love seeing these products in stores through out our area. If you don’t live nearby, no worries,  you can shop online.

Studio-Classroom

They have this great cooking studio where many of our culinary team building and private cooking parties are held.

Back to this Peach, Tomato and Mozzarella salad. The hardest part is slicing the peaches and tomatoes. Mix together this sweet and tangy Cherry Balsamic Vinaigrette and you are ready to eat!

Peach Tomato & Mozzarella Salad


Ingredients

Units Scale
  • 4 peaches (pitted and sliced)
  • 4 heirloom tomatoes (seeded and sliced)
  • 4 ounces Mozzarella
  • 2 tablespoons basil (torn)
  • Cherry Balsamic Vinaigrette
  • 1 clove garlic (finely minced)
  • 1 tablespoon Dijon mustard
  • 23 tablespoons Cherry Balsamic Vinegar
  • 1/4 cup extra virgin olive oil


Instructions

  1. Mix together Cherry Balsamic Vinaigrette in blender or mason jar.
  2. Mix together peaches, tomatoes and mozzarella. Toss with vinaigrette. Serve with crusty bread.
