Brown Butter Parmesan Mashed Potatoes

Ingredients

  • 3 1/2 pounds white potatoes peeled and cut into large chunks
  • Salt
  • Pepper
  • 2 cloves garlic
  • 1 stick 1/2 cup unsalted butter
  • 1/2 cup - 1 cup low fat milk
  • 1/2 cup parmesan cheese

Instructions

  • Place potatoes and garlic in a pan and cover with water. Add one teaspoon of salt and bring to a boil and cook until tender. Drain and put the pan back on the burner for a minute to dry out the potatoes. Put through a rice or in a bowl to mash.
  • While potatoes are cooking melt the butter in a saucepan and cook over medium low heat until the butter turns a brown nutty color. Remove from heat
