Happy New Years

The end of year always brings the endless stream of “best of lists”.  Well, I had to create one of my own.  I compiled my top 10 favorite posts of this last year. It wasn’t easy, as they are all close to my heart. This year I had the opportunity to meet many other bloggers and had a blast learning more about food photography.  I created new recipes and even have one being published in an upcoming publication.  Lot’s of things that made me smile. I am planning and looking ahead to new recipes to share with you. Thank you [...]

Crispy Pan Roasted Chicken with Garlic, Lemon & Thyme

In the midst of the Christmas craze I was craving a home cooked meal. Between work, Christmas programs and festivities I hit a wall and decided to hole up at home.  I had noticed a chicken dish by Emeril on Good Morning America the week before and for once had everything I needed. This dish was so simple yet such a great meal.  The skin became the perfect crispy and yet the meat was tender and so juicy.  It was perfection in 30 minutes. Crispy Pan-Roasted Chicken with Garlic-Thyme Butter From the Kitchen of Emeril Lagasse Servings: 2-4 Ingredients One [...]

Root Beer Float Cake

Root beer floats and I go way back. Often, on Sunday nights after church, my family would go to the local A & W.  It was the old school pull up and order into the metal box.  This had to have been mid 60′s to early 70′s. While in high school I worked at Knott’s Berry Farm in the ice cream shop.  I worked there to get free admission to the park where we would dance the night away on the weekends.  Of course, as a Baptist preacher’s kid, this was not allowed so it involved sneaking and scheming.  But [...]

Watermelon Limeade

Here in Southern California June gloom finally went away this weekend!  It felt like summer had officially started.  To celebrate I whipped up some Watermelon Limeade.  It is my new favorite drink.

Kids Cooking Giveaway

For the last of four Adventures in the Kitchen giveaways I thought we would give out a Kids Cooking Kit.  I started cooking and exploring in the kitchen when I was little.  Cooking is a great creative outlet for children.  Involving them in the process opens up new foods for them. One night when I was about 10 or 11 years old, my parents were out celebrating their anniversary and my little brother and I were with a babysitter.  I decided to make a cake from scratch.  I believe I left out an important ingredient such as baking powder or [...]

Barbeque Giveaway

The second April giveaway is a Barbeque Accessory Pack.  It features 4 items from Sur La Table, one of my favorite cooking stores.  The pack will include a Stainless Steel Grill Griddle, Wood Chip Smoker Box, Sauce Pot with Basting Brush and a large Sauce Mop. Today my Uncle Mark grilled my favorite asian chicken as part of our Easter meal.  Once or twice a year he whips up a batch of his secret sauce and serves up a batch of delicious Asian Style Barbeque Chicken.  I am still trying to get his recipe to share with you all. This [...]

Brownie Pudding

Today is my first official entry with the Barefoot Bloggers. I told you about them here. I don’t know that I have ever been disappointed by one of Ina Garten’s recipe so it will be fun to cook through her books with fellow Barefoot Bloggers. The Brownie Pudding is a cross between brownies and lava cake. It is fairly simple to make but decadent in taste. It will certainly cure any craving for chocolate. The ice cream and berries are a great compliment. I made this once several months ago and it came out a bit different. This time I [...]

Strawberry Cream Cheese Cupcakes

cupcake2

I saw these on another blog, Ezra Pound Cake, and thought they were the perfect thing to make today.  Why today?  Because it is time change, and to me that signals the countdown to spring. It is never fun to lose an hours sleep but tonight we will all be smiling when it is still light out this evening.  These cupcakes are so moist and the strawberry flavor subtly comes through.  These cupcakes, well they just make you smile.

Bucatini All’Amatriciana

This weekend I had a craving for pasta and decided to try a dish I have been looking at for awhile.  It is Bucatini All’Amatriciana.  I found a recipe from Babbo New York by Mario Batali.  The dish is named for the tiny town of Amatrice in Italy. I made many revisions based on what I had in the house.  First, I did not make the basic tomato sauce from scratch.  I used a sauce from Trader Joe’s which worked just fine.  I also did not have pancetta so I used smoked bacon I had in the house.  Finally I [...]
