Last week I made a Barbecue Chicken Salad for 60 teenage moms.  One of the joys of unemployment is having the time to serve and volunteer.  Frister’s is a non profit program for teen moms that helps to empower them so that they can lead successful, self sufficient lives. Cleaning out my cookbook shelf I came across Spur of the Moment Cook by Perla Meyers.  Being unemployed has it benefits, I have time to clean out closets and do all those things I meant to get to one day. This Arugula Mango Salad is a delicious lunch for a spring day.  I find that since I am not working and home more I have been able to eat healthier.  Salads are becoming a lunch time staple and last week I made one with items I had sitting in the refrigerator. Cooking Light arrived last week and featured a recipe for delicious Linguine with Green Peas and Pancetta.  We have had “cold for southern California” weather and more rain, but rumor has it, spring will be seen this week. One of my favorite salads is the Caesar Salad.  Not a bottled or bland caesar found in so many restaurants or on the shelves of grocery stores, but a freshly made salad. The salad is romaine lettuce, croutons and parmesan cheese tossed with a dressing made from lemon, olive oil, anchovies, garlic and an egg. Apple season is in full swing.  Last week I came across this Fresh Apple Vinaigrette that is from a new book, Gluten Free Girl and the Chef, by Shauna James Ahern.  I thought it would be a great dressing to a grilled radicchio salad.  The sweet apple dressing complaints the smoky flavor of the radicchio and endive.  I used a Buffalo Blue Cheese from my new favorite cheese store, Bruery Provisions.  It was creamy with just the perfect tang. Fresh Corn and Herb Saute

Corn is one of the foods that says summer to me.  Fresh corn cut off the cob can be transferred into tasty summer dishes.  A simple corn saute is heightened when you throw in a handful of fresh herbs.  This summer I have enjoyed having an herb garden.  I love being able to walk outside, clip a few herbs and add to a dish I am cooking. I discovered the recipe for this Cantaloupe, Red Onion and Walnut Salad while doing a little menu planning for a lunch this weekend.  Since I was working from home I decided to make this for lunch today.  With our heat wave going I love being able make something without having to turn on the stove or oven. Beer Battered Onion Rings

I never fry food.  I might love french fries but at home I oven bake them.  Then one day I saw a picture with a stack of crispy onion rings and that was it, I whipped out the Ipad and went to Google.
