Lime Cilantro Vinaigrette with Romaine and Ojai Pixies

Last week we had a day after the 4th barbecue with friends.  It was a bit of a potluck so I brought my Summer Fiesta Salad.  When I was here a few weeks ago each room had a small plate of Ojai Pixie Tangerines.  They were so delicious that I took the rest home. I had never heard of this brand before so I googled them, of course.  They were local to the area until a two of the farmers planted them commercially and started selling them at the local markets in Monterey.  From there they started to grow in popularity. [...]

Bread Salad with Chili Lemon Dressing

Lately I have been savoring the weekends.   In addition to gardening and enjoying time with friends, I have been cooking.  I tried new, easy and healthy dishes like Bread Salad with Lemon Chili Vinaigrette to try and make up for serving up all those treats I to you last month. Today at 5 I will start a weeks vacation and I am counting down the moments.  I get to play around the house, garden a bit more and spend time with these people.  Of course Max will be happy to have me home too!  The best part is I am [...]

Arugula, Carmelized Fennel and Tangerine Salad

Seo Tools I made this Arugula Salad with Tangerines and Carmelized Fennel last weekend.  It was so good I could have licked the plate clean.  I didn’t,  but I could have.  The combination of the fennel, arugula and tangerines accompanied by a sweet yet tart White Balsamic Vinaigrette was refreshing on a summer day. You take the fennel, add some thyme and drizzle with olive oil before putting in the oven.  I used these new tangerines from my local produce market called Temecula Gold Tangerines.  They were deliciously sweet and juicy.  The look ugly and crinkly from the outside but [...]

Arugula, Date, Parmesan and Almond Salad

Happy New Year everyone.  2010 is here and I have lots planned for Adventures In The Kitchen this year. It is the time of year where we set goals for the year.  One of mine is to eat healthy more consistently and exercise 3 x’s a week.  I am also planning to bring healthy lunches so that I don’t end up starving and buying something I really don’t want or need for lunch. I joined the Ten in 10: Ten Weeks to Healthy in 2010 group of food bloggers who have set goals for the first 10 weeks in 2010.  [...]

Apple Fall Salad with Apple Vinaigrette

Hot Night Clubs I have been trying out different salads with apples the last few days.  This is one of my favorites.  I love the crunchy textures and the tangy apples mixed with the sweet dates and creamy goat cheese. Apple, Grape & Date Salad with Apple Cider Vinaigrette Serves 4 1 Granny Smith apple, peeled and sliced 1/3 cup Medjool Dates, seeded and chopped 2 sticks celery, chopped 1/2 cup grapes, halved 4 cups mixed greens 3-4 ounces goat or feta cheese crumbled 3 tablespoons walnuts, toasted and chopped Raisin Walnut Bread croutons (see below) Apple Cider Vinaigrette 1/2 [...]

Cherry Almond Couscous

Chill Grapevine This summer I have been looking for cherry recipes to try and Cherry Almond Couscous had been one I really wantied to try.  Every time I would go to make this I’d be missing one ingredient.  Yesterday, everything fell in place. This dish is super quick and easy.  It is sweet from the cherries and the almonds give the dish a crunch to the bite.  It would be great served hot or cold as a salad.  In this 100 degree weather, cold sounds pretty good. Cherry Almond Couscous by Steve Petusevsky Makes 6 servings 1 cup water 1 [...]

Mixed Greens & Radicchio with Parmesan Balsamic Vinaigrette

With it being so hot this last week I find myself less hungry and having little desire to turn the oven on.  The being less hungry is a good thing.  I am so thankful to be in a different place this year after roasting in my apartment last summer.  There were days last year where it was hotter inside my apartment than outside.  I felt like I was on a rotisserie being slow cooked. Salads are great for this time of year.  You can make ahead, early in the day when it is cool and pull out when you are [...]

Caprese Salad

Two years ago I was in Italy around this time of year.  A group of friends went to stay in a villa in Tuscany.  Ok, villa makes it sound so grand.  Maybe a bit grander than the house really was, but it was Italy. Food was a huge part of our trip.  We ate at fabulous restaurants each night.  Local restaurants that served amazing meals. Many meals included tomatoes and mozzarella.  A few weeks ago we went to a little local Italian restaurant and had the best caprese salad as an appetizer.  I vowed to come home and recreate it [...]

Corn Salad with Jalapeno Lime Vinaigrette

Summer is full of fresh vegetables and fruit.  There are so many options that are both simple and fresh.  Corn is one of my favorite summer treats.  I love fresh sweet corn right off the cob.  It is great in salads and this is one of my new favorites.  The tangy jalapeno lime vinaigrette with the sweet corn is amazing. I am bringing this our family get together for the fourth of July. What will you be serving?

Strawberry Goat Cheese Salad

I spent my weekend wrestling a bbq.  When did it become impossible to find a bbq that was already put together?  After putting it together, taking it apart and trying again, I took a break.  I think reinforcements will have to be called in. In an attempt to turn my run of bad cooking around I revisited a few tried and true recipes. I first made this salad after having a dinner at my friend Tracy’s.  She had found this in Cooking Light.  The recipe called for a small toasted bread slice topped with goat cheese.  I decided to incorporate [...]
