<p>Did you think I had abandoned ship?  It has been quite the month and not necessarily in a good way.  I worked 24 days straight in preparation for a huge event at my day job and then a family member got very sick.  In those moments nothing else really matters.  Even in the midst of tough times we celebrated my nephew Luke&#8217;s 12th birthday and served up seconds of a delicious ice cream cake I made and failed to photograph, on Mother&#8217;s Day. Tonight is the first time I could put together a coherent sentence.</p>
<p>That decadent sandwich you see was part of my research on an article on Waffle sandwiches, which have been the rage here locally.  When the article comes out I&#8217;ll link to it but this one is a simple waffle, made from Bisquick and filled with marshmallows, graham cracker crumbs and milk chocolate chips.</p>
<p>I am packing for trip to Minnesota to visit a place that inspired my childhood love of cooking&#8230;can&#8217;t wait.  Almost thought it wouldn&#8217;t happen with all that has happened but Wednesday am my adventure begins.  You can follow my adventure on <a title="Twitter Adventures In The Kitchen" href="https://twitter.com/#!/advinthekitchen" target="_blank">Twitter</a> and on Instagram look for Advinthekitchen.  Follow me for updates throughout the trip. <p>Easter is coming up so my niece and I decided to make these cute Nutella egg nests. Being an aunt is such a blessing. I am reminded of that each weekend when we hang out together. The boys have long outgrown cooking, but still welcome being taste testers and critics! A few weeks ago they played &#8220;<a title="Chopped" href="http://www.foodnetwork.com/chopped/index.html">Chopped</a>&#8221; judging what I had made that evening. Thankfully, I survived!</p>
<p>My niece seems to have fallen in love with cooking like I did. She is always game to create something new. We made these Easter egg nests in the evening and I had left my camera at home. My sister-in-law was kind enough to snap a photo for me the next day.  We made the egg nests while watching our latest obssession, <a title="Shark tank" href="http://abc.go.com/shows/shark-tank">Shark Tank</a>.  Nothing like a few business lessons while making egg nests.</p>
<p>Food is a great way to build relationships.  When we cook together there is that opportunity to talk while stirring and mixing. Around the table we get to savor our time with those we love, catching up on the week and sharing our hearts. Next weekend we are barbecuing for Easter.  I look forward to gathering around the table with my family.</p>
<p>These Nutella Egg Nests were so simple to make. Start by melting white chocolate until smooth. Pour the chow mein noodles into the white chocolate and make sure they are all coated.  Place spoonfuls of the mixture on wax paper and form nests with a groove in the middle. Once the chocolate sets you put a teaspoon of Nutella in and top with Malted Milk Eggs.  How easy is that?</p>

<p>Mad Men is back this week!  Is anyone having a Mad Men party?  I should have some crazy retro recipe but instead I have these luscious and light Honey Grapefruit Cupcakes with Honey Buttercream.</p>
<p>Remember the honey from my niece&#8217;s birthday party?  Well, I thought I would bake something with it.  I love this honey.  I have been completely spoiled by this amazing honey.  If you have never tried local honey go out to your local farmers market and try it.</p>
<p>These cupcakes are more of a pound cake consistency but the yogurt makes them moist and the grapefruit and honey turned out to be a nice combination.  I whipped up a buttercream frosting with honey and grapefruit juice.  I finished them off with a little drizzle of honey on top of the frosting.</p>

Whisk together the yogurt, sugar, honey, eggs, grapefruit zest, and vanilla. Slowly incorporate the dry ingredients into the wet ingredients. With a rubber spatula, fold the vegetable oil into the batter, making sure it’s all incorporated. Pour the batter into the muffin tins and bake for about 20 minutes, or until a cake tester placed in the center of the loaf comes out clean.</li><li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">Meanwhile, mix the honey buttercream ingredients together.</li><li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">When the cake is done, allow it to cool in the pan for 10 minutes. Carefully place on a baking rack over a sheet pan. While the cake is still warm, pour the grapefruit-sugar mixture over the cake and allow it to soak in. <p>It&#8217;s Friday, always a time to celebrate right?  How about a warm cup of hot Cake Batter White Chocolate Cocoa.  It seems cake batter anything tastes great these days.  It just hit me the other day that I still have most of a bottle of <a href="http://www.uvvodka.com/page/show/333797-uv-cake">UV Cake Vodka</a> sitting in my cupboard.  My mind started dreaming up new ways to put it to use and what I ended up with was this luscious drink.</p>
<p>Sprinkles just make me smile.  It is hard to stay mad or be too serious sipping a drink that is topped with sprinkles.  The kids know something. All this time they have cornered the market on sprinkles but then we found out and now we want more.  Sprinkles take us all to a happy place, a remembrance of times past, when we were innocent and easily amused.  Where a few little colored sprinkles meant this was a special occasion.</p>
<p>This is an adults only drink, though you could give the kids the white chocolate hot cocoa minus the shot and still add the sprinkles.  I ended up frothing part of the millk in one of these <a href="http://www.williams-sonoma.com/products/nespresso-aeroccino-plus/?pkey=ccoffee-milk-frothers">amazing Nespresso frothers</a> , one of my favorite kitchen gadgets.  When I stirred the frothed milk in to the cocoa, it lightened up the drink.</p>
<p>Here&#8217;s to a wonderful weekend &#8211; I will be helping my cousin <a href="http://www.timeforeverything.net/">Cassie</a> celebrate her 30th birthday. She has a new blog called A Time For Everything &#8211; go wish her a happy birthday if you have a minute and check out her blog. What are your plans this weekend?  Hope they include sprinkles and maybe a cup of hot cocoa.</p>

<p><span style="color: #ff6600;">UPDATE &#8211; Contest extended until Friday, March 9.</span>  For many of my readers the thought of popsicles this early might seem crazy but here it&#8217;s was 80 degrees this week.  I thought I&#8217;d tease you with a hint of what is to come as we get closer to spring.  These are Strawberry Honey Popsicles that are Lactose Free thanks to Yoplait&#8217;s new line of lactose yogurts.</p>

<p>How great is that?  New <a href="http://www.yoplait.com/lactose-free?WT.mc_id=Paid_Search_Brands_YPT_Whips&amp;WT.srch=1">Yoplait® Lactose Free</a> yogurt comes in <em>four flavors</em>: Strawberry; Peach; French Vanilla; Cherry.  I borrowed my aunt&#8217;s popsicle <a href="http://www.zokuhome.com/pages/products-quickpop-maker">Zoku Quick Pop</a> maker so that I could see if I liked it.  It makes them so quickly &#8211; which is a huge benefit when working with kids.  I had a few trial and errors on removing them.  I screwed the top down too tight causing cracks in the popsicles.  Overall I was very happy with it and am already dreaming up a few new recipes.</p>
<p>The Zoku maker has to be frozen overnight prior to use.  It needs to be solid.  If you hear sloshing noises it needs to freeze for longer. Right before you serve you place the stick holders into the molds.  (I didn&#8217;t get a picture of the maker, this is when I tried it in my regular molds)</p>

<p>To make them, I mixed the ingredients together and then poured into the molds. I waited   and then put the</p>
<p>Wrap and keep frozen until ready to serve.</p>

<p>When I first started this blog I joined <a href="http://tuesdayswithdorie.wordpress.com/">Tuesdays with Dorie,</a> a weekly baking group.  I participated for while but then my day job made it hard to do on a weekly basis.  I loved Dorie’s book and trying recipes I never would have tried.  Recently I saw that they were know starting <a href="http://www.amazon.com/gp/product/0688146570/ref=as_li_ss_tl?ie=UTF8&amp;tag=adveninthekit-20" rel="nofollow">Baking with Julia: Savor the Joys of Baking with America&#8217;s Best Bakers</a><img style="border: none !important; margin: 0px !important;" src="http://www.assoc-amazon.com/e/ir?t=adveninthekit-20&amp;l=as2&amp;o=1&amp;a=0688146570" alt="" width="1" height="1" border="0" />.  It is a cookbook I have owned since my work as a personal chef.  The book is really a course in baking with recipes and learning techniques.</p>
<p>I have fond memories of my first experience with the group and the community they built.  So here I am again, four years later joining to get to  know others in this community and expand my baking skills.  The recipes are much more challenging so it will be interesting. The book features many well-known chefs and the recipes they made on Julia’s show.  It will be fun to share them with you.</p>
<p>So here is my first entry, Chocolate Truffle Tarts.  This week is being hosted by A Whisk and a Spoon, <a href="http://spikebakes.tumblr.com/post/17995834250/chocolate-truffle-tartlets">Spike Bakes</a>, <a href="http://www.goodeatsblog.com/">Good Eats and Sweet Treats</a> and <a href="http://cookbookhabit.blogspot.com/">Cookbookhabit</a>. I quickly photographed before heading off to work.  I have been using this chocolate tart dough for awhile and find it easy to make, especially using a food processor.  The filling came together quickly too, I cheated and melted the butter and chocolate in a microwave.  The whole thing was in the oven baking within about 10 minutes (after the tart shells had baked).</p>
<p>It is reminiscent of a brownie in a chocolate tart.  These make great finger treats at a party, though I might top them with raspberries next time.</p>

<p>What happens when you marry two food favorites?  In my case you get Red Velvet Popovers.  My love affair with popovers started as a child at Buffum&#8217;s department store.  I was inspired by Joy&#8217;s <a href="http://joythebaker.com/2011/05/hot-chocolate-popovers/">Hot Chocolate</a> popovers and thought why not Red Velvet? These could make someone swoon on Valentine&#8217;s Day.</p>

<p>Hot out of the oven they are stuffed with Hershey&#8217;s Mini Kisses and topped with a marshmallow.  Served with the Marshmallow Cream Spread schmeered (is that a word) over the warm popover puts it over the top.  The spread is a mixture of mascarpone cheese and marshmallow fluff.  My favorite little taste tasters gave it two thumbs up.</p>

<p>The popovers are super easy to make because you whip it all up in a blender and pour into the pan.  The hardest part is letting them bake in the oven without opening the door.  Thankfully I have a window with a light so I could peek in and see them rising up in the pan and creating beautiful red puffs.</p>

<p>For dessert we had Chocolate Fudge Cake Push Ups with Vanilla Buttercream Frosting.</p>
<p>One of the highlights of the party was seeing how honey is made.  Fernando, the resident beekeeper, gave us a demonstration.  I&#8217;ll share that tomorrow.</p>
<p>These beautiful pictures were provided by Joy&#8217;s sister, Leanna Creel of <a href="http://www.creelfilms.com">Creel Films</a>.  Taking better photos is one of my goals this year so I got to ask her a few questions.  It is always fun to have a professional photographer shoot my work and not myself!  She has worked on photos and film for The 12 Days of Christmas at <a href="http://www.meadowood.com/">Meadowood</a> in Napa Valley.  She has also worked for Food Network.  Yes, I am envious!  Go check out her work! This is her adorable son Levi.  He had a bee stuck in his hair at the party! My brother saved the day.</p>

<p>Saturday afternoon my niece and I set out for a cooking adventures with my Aunt Ginny.  We were going to learn how to make Fattigman cookies, a norwegian cookie that my Nana Thorsen used to make every Christmas.</p>
<p>My great grandmother came through Ellis Island when on her way from Norway to America in the early 1900&#8242;s.  I feel fortunate that I was able to spend the time I did with my great grandparents.  Nana Thorsen lived to almost 101 years old.  I wish I had taken the time ask more questions but I was in elementary school and too young to know I would love to know their stories as the years went by.</p>
<p>Fattigman cookies are known as &#8220;poor man cookies&#8221;.  It seems every scandanavian country has a version of it.  They are ribbons of dough fried and covered with powdered sugar.</p>

<p>They measured, rolled and cut using this cool cutter I am on a hunt to find. She would have kept going but we insisted my aunt had to fry.  The dough is slid into hot oil and turned to allow the cookies to turn a golden color.</p>

<p>We do not bake often, so this is a very special treat in our house. After paging through the recipes and photos one always rises to the top. It’s not in the photo-heavy cookbook—in fact, it’s not in any cookbook. It’s etched in their memories from holidays past. Memories of baking for hours and eating crumbs they carefully trim to make the crisp cookies perfectly round. It’s an involved process we all love.</p>
<p>My grandmother and mom made pizzelles and handed the pizzelle maker to me several years ago. It was supposed to be a one-year commitment and then I’d pass it on to my sisters, but I can’t give it up. Each December, we dust off the pizzelle iron and carefully pull out the yellowed directions from 1967.</p>

<p>We start by mixing the batter and letting it rest in the refrigerator overnight. A full batch includes a dozen eggs, sugar and oil. The biggest decision whether to stick with tradition or be adventurous. We tried chocolate once, but we decided we need to honor tradition. Anise and lemon it is.</p>

<p>Part of the appeal of the cookies is counting how many we make. Italians are always cooking for an army and these cookies reflect that: over 100 cookies per batch, even subtracting the broken ones. When my boys were little I was always up until 10pm making the cookies once they were tucked into bed. I love that now we work together. Each one takes a job assignment- one pours the batter into the pizzelle maker, checks for doneness and removes them from the maker. The other carefully trims the edges to make each cookie a circle. Once cooled, the cookies are counted and moved to a plastic container for storage. A separate container stores the crumbs, which is magically emptied by the end of the night.</p>
