Hoisin BBQ Chicken with Tropical Salsa

Summer entertaining is here.  Since I am not a meat eater, I am always looking for new ways to cook chicken.  This Hoisin BBQ chicken with Tropical Salsa is one of the new ways I am cooking it this summer.  The hoisin sauce is sweet yet spicy.  The salsa has pineapple, mango, strawberries and red pepper.  This one has just a hint of ginger but you could add cilantro or mint if you want to. Indonesian Ginger Chicken with Peanut Satay Sauce

Pm Lounge Dallas It is time change this weekend and I can’t wait for spring and summer. Today it is a beautiful and sunny day. Did you remember to turn that clock forward? Spring means it is  time to grill and I immediately thought of Indonesian Ginger Chicken.  When I was catering this was a popular appetizer.  The Satay Sauce is sweet and spicy. If you want to serve individually take small plastic or glass cups.  Place a tablespoon of the sauce in the bottom and serve on a small skewer standing up in the glass.

In the midst of the Christmas craze I was craving a home cooked meal. Between work, Christmas programs and festivities I hit a wall and decided to hole up at home.  I had noticed a chicken dish by Emeril on Good Morning America the week before and for once had everything I needed. Szechwan Hoisin Honey Chicken

Here is another quick chicken dish that can be whipped up after dinner.  I made this a few weeks ago but have taken awhile to post it.  This is from the Wok Fast book by Hugh Carpenter and Teri Sandison.  It has a menu of sauces that you can mix and match to create your own dish.
