<p>Melt the butter in a small saucepan.  Looking at these pictures I think it&#8217;s time I get a new pan!</p>

<p>Then add the hot sauce.  I used Frank&#8217;s Red Hot Wings Sauce.</p>

<p>Mix together to create the sauce.</p>

<p>Layer the chips. One of the recipes used Ranch tortilla chips but I used the regular chips I had in my pantry.</p>

<p>Place in the oven for a few minutes and dig in.  Serve Ranch on the side. They really do capture the flavors of hot wings onto nachos.</p>

Stir and let heat for 1-2 minutes. Add half the chicken mixture and top with half the celery.  Repeat. <p>Last weekend at my niece Olivia&#8217;s party we learned how honey is made.  It was so cool. Her grandfather has four boxes of bees that Fernando is harvesting. <p>I wish I could give you a sample so that you could taste this beautiful honey. The honey is delicious and has a hint of eucalyptus. We learned the honey takes on the flavor of the trees around the bees.  It tastes so much better than what you buy at the stores.  Once you have tasted this you can&#8217;t have anything else. My sister-in-law was telling me disturbing info about the honey we buy in our grocery stores. I want to look into it before I share about that.</p>
<p>Honey has medicinal qualities and eating honey from your area is supposed to help with allergies.<br />

<p>He had a smoker that makes the bees sleepy.  When you have 10 little girls and a little boy running around, sleepy bees are good.</p>

<p>He took out the frames from the boxes and even showed us the Queen bee.  Each frame had 5 to 8 pounds of honey.</p>

<p>He scraped it off and put it in this spinner. The girls were put to work!</p>

<p>At the end Fernandopoured the honey into these cute little bear jars and the girls got to take a taste home.</p>

<p>My job was to make these little thank you tags to go around the jars.</p>

<p>Truth is I have been hoarding the jar Joy gave me a few months ago.  Why?  I decided it was time to start enjoying this local nectar.  I made Honey and Chipotle chicken.  It is a quick and easy meal. Basically you saute your onions, add the chicken, a bit of chicken stock and garlic.  After browning on both sides you add a mixture of chipotle and honey.  The skillet goes into the oven for 8-10 minutes and you are ready to eat.</p>

<p>I served the chicken with a twice baked goat cheese and chile potato.  The creamy potato was a nice compliment to the sweet and spicy chicken.  I&#8217;ll have to be share that one with you soon! Sorry for the poor photos of the chicken! My flash was not working and these winter nights are killing me.</p>

Season chicken with salt and pepper.</li><li id="zlrecipe-instruction-1" class="instruction">Heat the olive oil in a ovenproof skillet.  Place the red onions and cook for 2 minutes.  Add chicken and brown on both sides.  Add garlic and half the stock. <p>By New Year&#8217;s day I am ready for healthy food.  The sweets and rich food, even when you try to watch it, can get the best of you.  I find my body starts craving healthy and fresh.</p>
<p>Today, I made Baked Coconut Chicken with a Sweet and Spicy Orange Sauce.  It is super easy to make and I think it a dish the kids will like too. Sorry about the not so great photo!  These can be a meal or an appetizer at a party.  For an appetizer I would cut into smaller pieces. They have 6 points on Weight Watchers Points Plus 2012.</p>
<p>You start by mixing the corn flakes, coconut and panko together in a bowl.</p>
<p>Place the egg white it one bowl and the flakes on a plate next to it.  Dip each chicken strip in the egg whites and then in the crumbs.  Make sure they are well coated.</p>
<p>I spray my baking sheet with canola and then spritz the top of the chicken strips too.  This makes it a little extra crispy and helps brown.</p>
<p>In a small bowl mix the orange marmalade, chili sauce and soy sauce.</p>

Let rest 5 minutes before slicing.</li><li id="zlrecipe-instruction-2" class="instruction">In a non stick pan over medium high heat add garlic and onion and cook for 3 minutes, add vegetables and cook until slightly charred but still firm. <p>I have a confession to make.  I never had a tostada before.  Really most Mexican foods.  It&#8217;s almost a crime living in Southern California.  I have cooked up some tasty Mexican meals but that old picky eater thing kept rearing it&#8217;s ugly head.  Well, recently I took a step to overcome that.</p>
<p>I created these after seeing this Chipotle Lime Salsa.  I love the combination of chipotle and lime but needed a dish to partner with the salsa. I panfried the tortilla&#8217;s,   grilled the chicken breast, pepper and tomato&#8217;s and then mixed them with a bit of salsa I had on hand.  I had left over cabbage from this so I decided to mix with lime and cilantro for a sweet, tart slaw for the base of the tostada.</p>
<p>I ended up folding it over and eating it more like a taco.  Either way, I loved my foray into Mexican and am already planning my next experiment.  I&#8217;d love to hear what your favorite Mexican dish is.</p>
<p>I am in the midst of a blog remodel, so please excuse the little things that might be out of place.  I hope to finish it up tomorrow.</p>
<p>2 chicken breasts<br />
1 red pepper<br />
6 cherry tomatoes, halved<br />
Bottled salsa<br />
4 flour tortillas</p>
<p>Lime Cilantro Slaw</p>
<p>Juice of 1/2 lime<br />
1/2 cup white cabbage<br />
1/2 cup red cabbage<br />
1/4 teaspoon cumin<br />
1 tablespoon honey<br />
2 tablespoons canola oil</p>
<p>Mix together in a small bowl.</p>
<p>Chipotle Lime Salsa</p>
<p>2 plum tomatoes, finely diced<br />
1 lime, juiced<br />
1/4 cup chopped scallions<br />
2 to 3 chipotle peppers in adobo, finely chopped<br />
1/4 cup finely diced red onion<br />
Salt and freshly ground black pepper<br />
Honey, if needed</p>
<p>Mix together in a small bowl.</p>

			<content:encoded><![CDATA[<p>Last week I made a Barbecue Chicken Salad for 60 teenage moms.  One of the joys of unemployment is having the time to serve and volunteer.  <a href="http://www.fristers.org">Frister&#8217;s</a> is a non profit program for teen moms that helps to empower them so that they can lead successful, self sufficient lives.</p>
<p>My friend Ali started this seven years ago and just this year added a new location in Yorba Linda.  Each week over 100 girls attend the two evenings.  One of the cool things they do is start each evening by sharing a meal together.  Ali intentionally built that in and feels contributes to the family feel of the groups.  Once a month they celebrate the girls birthday&#8217;s with cakes baked by volunteers.</p>
<p>To make up for the decadent Baked Ziti with Sausage I had made the week before I decided to make barbecue chicken salad.  It was fitness night and they were learning about the benefits of exercise and then working out to a Dancing with the Stars video. Over the course of nine months they visit all aspects of their life through a curriculum Ali and her team have developed.</p>
<p>One of her volunteers was so funny.  She was helping me carry in the food and asked if I had made the meal last week.  When I said that I had because cooking is one of my passions she replied &#8220;Well, we love to eat so this is a match made in heaven.&#8221;</p>
<p>This is based on the recipe from California Pizza Kitchen with a few adaptations.  If you want an even easier version use a bottled ranch dressing, though this one made from scratch is worth the extra effort.<span id="more-1784"></span></p>
<h3>Barbecue Chicken Salad</h3>
<p>BBQ Chicken</p>
<p>4 chicken boneless skinless chicken breasts<br />
Bottle of your favorite Barbecue Sauce</p>
<p>Preheat oven to 350 degrees.</p>
<p>Place the chicken in a baking dish.  Sprinkle with salt and pepper.  Brush barbecue sauce on the chicken breasts.</p>
<p>Bake 20-30 minutes, until chicken is cooked through.  Cool and chop up the chicken.  Coat it with 1/2 cup barbecue sauce and refrigerate until ready to mix in salad.</p>
<p>Garden Ranch Herb Dressing</p>
<p>1/2 teaspoon dry mustard<br />
1/4 teaspoon cold water<br />
3/4 cup mayonnaise<br />
1 cup buttermilk<br />
8 tablespoons sour cream<br />
1/2 tablespoon apple cider vinegar<br />
1/2 tablespoon thinly-sliced scallion top, and whites<br />
2 teaspoons minced garlic<br />
2 teaspoons minced fresh Italian parsley<br />
1/2 teaspoon Worcestershire sauce<br />
1 teaspoon minced fresh dill<br />
1/4 teaspoon minced dried oregano<br />
1/2 teaspoon fresh ground black pepper<br />
1/4 teaspoon minced fresh basil</p>
<p>In a mixing bowl, use a fork to stir together the mustard and cold water, forming a paste. Set aside for 10 minutes. Add the remaining dressing ingredients to the bowl and, using a handheld electric mixer at low speed or a whisk, blend together just until smooth, taking care not to incorporate too much air into the dressing. Cover with plastic wrap and refrigerate.</p>
<p>Salad</p>
<p>1/2 head iceberg lettuce (cored, rinsed and dried and cut into thin 1/8&#8243; strips)<br />
1/2 head romaine lettuce leaf (separated, trimmed, rinsed, dried, and cut thin strips)<br />
12 large fresh basil leaves, cut 1/8-inch strips<br />
2 cups shredded monterey jack cheese<br />
1 cup canned black bean, rinsed drained<br />
1 cup canned sweet white corn kernels, drained<br />
3 tablespoons chopped fresh cilantro<br />
2 lbs fresh ripe tomatoes, cut into 1/2-inch dices<br />
1/2 cup good-quality sweet-&amp;-spicy barbecue sauce<br />
1 cup tortilla strips</p>
<p>In a large mixing bowl, toss together the lettuces, basil, jicama, Monterey Jack cheese, beans, corn, cilantro, dressing, and half of the Fried Tortilla Strips. Transfer the salads to chilled serving plates. Surround each salad with diced tomatoes and the remaining Fried Tortilla Strips. Top each salad with chunks of BBQ Chicken and drizzle the chicken with the barbecue sauce. Garnish with the scallion.</p>

<li class="ingredient"> <span class="amount">1/2</span><span class="name"> lemon, juiced &amp; zested</span></li>
<li class="ingredient"> <span class="amount">2 </span><span class="name">garlic cloves, minced</span></li>
<li class="ingredient"> <span class="amount">1 cup</span><span class="name"> panko breadcrumbs</span></li>
<li class="ingredient"> <span class="amount">1/3 cup</span><span class="name"> parmesan cheese, grated</span></li>
<li class="ingredient"> <span class="amount">1 teaspoon</span><span class="name"> salt</span></li>
<li class="ingredient"> <span class="amount">2 tablespoons</span><span class="name"> cilantro or parsley (optional)</span></li>
<li class="ingredient"> <span class="amount">1 tablespoon</span><span class="name"> butter</span></li>
<li class="ingredient"> <span class="amount">1 tablespoon</span><span class="name"> olive oil</span></li>

<p>Cooking Directions</p>
<ol class="instructions">
<li class="instruction"> Blend panko, lemon zest, parmesan cheese, cilantro or parsley (if using), salt and garlic in food processor.</li>
<li class="instruction"> Place in shallow bowl for rolling.</li>
<li class="instruction"> Combine eggs and lemon juice in separate bowl and mix well.</li>
<li class="instruction"> Dip each chicken breast first in the egg mixture and then thoroughly roll in cheese/panko mixture.</li>
<li class="instruction"> Heat a large non stick pan over medium high heat.  Melt butter and add olive oil.  Place chicken breasts in pan and cook until crisp on each side.</li>
</ol>
<p>Prep time: 10 minutes<br />
Cook time: 10 minutes<br />
Total time: 20 minutes<br />
Yield: 4 servings</p>
<p>If you to cut some calories you can place in a baking  dish and cook at 400 degrees for 20-25 minutes, or until the crust is  turning brown and the chicken is cooked through.</p>

<p>Certain foods evoke memories from our past.  Chicken Pot Pie is one those foods in our family.  Growing up we went to <a href="http://events.ocregister.com/anaheim-ca/venues/show/56697-la-palma-chicken-pie-shop">La Palma Chicken Pie Shop</a>.  It was a classic restaurant serving down home comfort food.  Chicken Pot Pies were and still are their specialty.  We went there often and sometimes Mom would bring home chicken pot pies for dinner.  They are the quintessential comfort food.</p>
<p>This weekend I made Chicken pot pies with my niece and nephews.  Mostly my niece as the boys are slowly outgrowing cooking, though not from being my favorite taste testers.  I took a short cut by bringing a rotisserie chicken over.  I took off all the meat and chopped it up.  We made a rich, thick sauce filled with carrots, celery, onions and peas. We rolled out the dough, made from a recipe by <a href="http://www.foodnetwork.com/recipes/ina-garten/chicken-pot-pie-recipe/index.html">Ina Garten</a>, and cut out the circles to top the pies.  If time is short you can use premade pie dough or puff pastry.</p>
<p>I was happy with the outcome.  The kids and even my mom loved the chicken pot pies. I was given the direction to make it more often, which is the greatest compliment they can give me.</p>
<p>We sat around the table sharing our homemade pot pies and talking about their week.  This week they attended a Celebration of Life for their dear friend Brielle who recently lost her fight with cancer.  I first shared her story back in <a href="http://adventuresinthekitchen.com/2008/04/a-taste-of-yellow-for-brielle/">2008</a>. She was a brave little girl who fearlessly shared her love for the Lord with everyone she met over the time she was sick.  She had a huge heart and a zest for life.  She was insistent that no one would wear black to her service so over 2,000 people showed up, many in tie die shirts to celebrate her life.  You can read more about Brielle and her story <a href="http://www.briellemurray.com">here</a>.</p>

<p>1 Rotisserie chicken meat removed and chopped<br />
5 tablespoons butter<br />
1/3 cup flour<br />
3 carrots, peeled and cut<br />
2 stalks celery, cut<br />
1 medium finely chopped onion<br />
1 cup whole milk<br />
1/4 cup sherry<br />
2 1/2 cups chicken stock<br />
1/2 cup peas, frozen<br />
1 teaspoon salt<br />
1/2 teaspoon pepper<br />
1 teaspoon thyme, finely minced<br />
1 teaspoon rosemary, finely minced<span class="ingredient"><span> </span></span></p>

<p><span class="instruction">1.  In a large saucepan melt the butter.  Add the onions, carrots and celery and cook until onions are softened.</span></p>
<p>2.  Whisk in the broth and then the milk and sherry.  Turn to low heat and simmer for 10 minutes to let thicken.</p>
<p>3.  Fold in the chicken, thyme, rosemary, salt and pepper. Stir to combine and turn off the heat.</p>
<p>4.  Place in individual ramekins and top with pastry rounds (see below).  Take a fork and press on the dough around the edge to make it stick.  Brush with an egg that has been beaten and a make a slit in the top.Sprinkle with sea salt and cracked pepper.</p>
<p>5.   Place on a baking sheet and bake for 1 hour, or until the top is golden brown and the filling is bubbling hot.</p>

<p><span class="instruction">1. Mix the flour, salt, and baking powder in the bowl of a food processor fitted with a metal blade. Add the shortening and butter and mix quickly with your fingers until each piece is coated with flour. Pulse 10 times, or until the fat is the size of peas. With the motor running, add the ice water; process only enough to moisten the dough and have it just come together. </span></p>
<p>2. Dump the dough out onto a floured board and knead quickly into a ball. Wrap the dough in plastic and allow it to rest in the refrigerator for 30 minutes.</p>

True confession time.  I have a cookbook addiction.  It&#8217;s a bit of a problem.  Bookcases full of cookbooks new and old.  Early Betty Crocker and Better Homes and Gardens.  Julia, Dorie, Bobby and Nancy all fill my shelves.</p>
<p>One of my favorite cookbooks from my early days in the kitchen was Jim Fobel&#8217;s Big Flavors.  The book features flavor packed recipes from a broad ethnic background.  My friend Deanna and I cooked our way through this book, sharing our favorite recipes with each other.</p>
<p>This weekend I was flipping through Big Flavors and saw a recipe for Chicken Jalapeno. Don&#8217;t be scared off &#8211; you can control the amount of jalapeno! It is a chicken breast browned and topped with a mexican sauce of jalapenos, garlic and tomatoes.  The oregano gives it a smoky base.</p>
<p>The dish comes together quickly.  I browned my chicken and then finished it off in the oven.  I did not add the cheese but the jalapeno jack cheese would enhance the flavors of the dish.</p>
<p>What is your favorite cookbook? I&#8217;m always looking to add a new one to the shelf.<span id="more-1550"></span></p>
<p><strong>Chicken Jalapeno Scallopine</strong><br />
Adapted from a recipe by Jim Fobel, Big Flavors Cookbook<br />
Makes 4 servings</p>
<p>4 boneless skinless chicken breast pounded until thin<br />
2 tablespoons olive oil<br />
1 teaspoon butter<br />
1/4 cup all purpose flour<br />
1/2 teaspoon kosher salt<br />
1/2 teaspoon black pepper<br />
1/2 &#8211; 1 jalapeno, seeded and diced<br />
1 clove garlic, diced<br />
1/2 teaspoon cumin<br />
1/2 teaspoon dried oregano<br />
1 cup fresh or canned tomatoes, seeded and diced<br />
1/4 cup beer or white wine<br />
Juice of 1/2 lime<br />
1/2 teaspoon salt<br />
1/8 teaspoon freshly ground black pepper<br />
4 scallions, sliced<br />
4 ounces jalapeno jack cheese (optional)</p>
<p>Preheat a large, heavy skillet.  Put the flour, salt and pepper in a shallow dish.  Dredge the chicken in the flour mixture. When the skillet is hot, put the olive oil and place the chicken in the skillet.  Brown on both sides</p>
<p>Add the butter to the skillet along with the jalapeno, garlic, oregano, and cumin.  Saute for 1 minute over moderate heat.  Add the tomatoes, wine or beer, lime juice, salt, and pepper and bring to a boil.  Cook for 2 minutes.  Spoon half of the sauce into a small bowl.</p>
<p>Return the chicken to the skillet in a single layer; top with the scallions and cheese. Spoon the reserved sauce over the cheese, cover and cook until the cheese melts, about 3 minutes.  Serve hot.</p>
