Roasted Banana Bars with Brown Butter Pecan Frosting

I am part of the 10in2010 group with the goal of eating healthier and getting more exercise. Looking through Cooking Light online I found these amazing Roasted Banana Bars with Brown Butter Pecan Frosting. People looked at my skeptically when I said it was from Cooking Light. It was all I could do to not just eat the  roasted bananas and caramel sauce out of the pan.  The sauce was sizzling around the roasted bananas.  Roasting the bananas gives the cake a subtle carmel flavor and adds to the richness of this dessert. On another note my cousin Cassie has [...]

Pumpkin Cupcakes with Maple Cream Cheese Frosting

After spending days cooking with apples I thought it was time to move on to another fall treat, the pumpkin.  I was looking at one Pumpkin Cupcake recipe until I saw this one at the Smitten Kitchen. I was over there checking out the latest cute pictures of her son.  The Maple Cream Cheese Frosting sounds like a delicious addition boost the flavor. These cupcakes are deceptively light with the perfect spice kick to them.  Thankfully I had a volunteer meeting to quickly take these to and more importantly away from my house.

Chunky Apple Walnut Cake

I have had a craving to bake with apples.  Maybe it is because a bit of fall has arrived here in Southern California, which means a slight cool breeze. That is all I needed to break out the fall clothes and more importantly the fall cooking. I found this Chunky Apply Walnut Cake in The Silver Palate Cookbook.  This cake is dense, moist and filled with chunks of apple and crunchy walnuts.  The glaze that goes over has a buttery apple flavor that soaks into the cake. Looking up the recipe on the internet it was apparent that this was [...]

Peaches and Blackberry Coffee Cake

I decided to try making a coffee cake from the Bisquick Healthy Heart.  Can I tell you a secret?   I grew up with a mom who used Bisquick.  That was the base at our house for both biscuits and pancakes.  My favorite hands down was the coffee cake. I confess that it is still on hand for those quick cooking needs. I have been enjoying all the bounty of fresh fruit and decided to incorporate peaches and blackberries into a coffee cake.  I decided to try it using Bisquick. In all honesty the first one did not turn out, the [...]

Strawberry Cake

This weekend we celebrated my friend Tracy’s birthday with a little barbeque at a friends house.  I was looking for a simple cake to bring for our celebration when I  stumbled onto this Strawberry Cake.  Strawberries are in season and I thought they would go great with our meal. It is an easy cake to put together and is in the oven within minutes. The cake was a hit. Halle, my goddaughter went back for seconds and even Tracy snuck a second bite.  We decided it would also be great with coffee in the morning.  I might even throw in [...]

Meet My Adoptee from Adopt A Blogger

Meet My New Adoptee This was a big week.  I took home a puppy and adopted…a blogger. As a new blogger I wished I had had a mentor or someone I could talk to.  Kristin of Dine and Dish announced a new round of Adopt A Blogger and I decided to sign up. I was matched with Adrienne of Hungry Bruno. Frankly, I think she is pretty savy, but I am excited to be of  help however I can. She is from Boston and you need to go and check out her site. In celebration of our match I baked [...]

Grapefruit Cake with Cream Cheese Frosting

I love grapefruit, really any citrus fruit.  I found this recipe for grapefruit cake and as I was reading the history it was “allegedly”  from the Brown Derby in Hollywood.  It has been gone for a long time but it was legendary in its day.  The grapefruit and the restaurant capture the essence of Southern California. Growing up here in Orange County we would take our out of town visitors to Hollywood.  We would try and find stars homes in Beverly Hills.  We would walk down Rodeo Drive and then go over to Grauman’s to look at the stars and [...]

Strawberry Cream Cheese Cupcakes

cupcake2

I saw these on another blog, Ezra Pound Cake, and thought they were the perfect thing to make today.  Why today?  Because it is time change, and to me that signals the countdown to spring. It is never fun to lose an hours sleep but tonight we will all be smiling when it is still light out this evening.  These cupcakes are so moist and the strawberry flavor subtly comes through.  These cupcakes, well they just make you smile.

Chocolate Ganache Cake

Ok, so this isn’t on anyone’s New Years Diet but just remember it for that special occasion.  I know it looks so simple, maybe a bit plain.  Don’t let that fool you.  This is a decadent cake.  It is also super easy to make and is very forgiving.  Undercooked a bit it is a gooey fudgy cake. My friend would call this a heart attack waiting to happen and to be fair I will offer up a lower calorie alternative that she bakes quite often.  But sometimes the occasion demands decadent.  Maybe a celebration or you are having a die [...]

Brown Sugar Cake with Caramel Frosting

We are taking a break from the party recipes to share this yummy cake I made last week.  The brown sugar cake topped with caramel frosting is so good you should plan on immediately giving it away so you will not be tempted to eat the whole thing. Luckily I had a place to bring the cake saving me untold calories.  One of the woman said it reminded them of a maple bar donut.  The cake is moist and very flavorful. One hint, when it says the frosting hardens quickly, it means immediately.  You have been warned. Brown Sugar Cake [...]
