Buffalo Chicken Nachos

BEAUTY Buffalo Chicken Nachos-2

I had a craving for Buffalo Wing something so I started looking around for inspiration.  I saw this and then this and decided to give it a try.  I made Buffalo Chicken Nachos for Two.  Of course, you can upsize for a crowd with the Super Bowl this coming weekend. In my college days we would go to TGIFriday’s and eat chicken wings along with other not super healthy food.  I don’t have chicken wings very often  these days but had a surplus of shredded chicken. It seemed like a good idea.  It is a nice snack or light meal. [...]

Today, I made Baked Coconut Chicken with a Sweet and Spicy Orange Sauce.  It is super easy to make and I think it a dish the kids will like too. Sorry about the not so great photo!  These can be a meal or an appetizer at a [...]

Baked Kale Chips Recipe

Baked Kale Chips

Lately I have been watching what I eat and even trying a great detox where I lost 11 pounds in a month. Two months later I still have the 16 pounds off!   In the process I have been trying to identify healthy alternatives to the food I normally might gravitate too.  When cooking is a passion it can be challenging at times. Kale is a super food and thought to be one of the must have foods in your diet.  Being a bit of a picky eater I thought I would try Kale Chips. I was pleasantly surprised to find [...]

Baked Figs with Goat Cheese and Bacon

baked figs with goat cheese and bacon

I was so happy to see figs reappear recently.  It was just a year ago that I discovered this luscious fruit.  For the first fig recipe this year I went simple making a fig stuffed with goat cheese, sprinkled with bacon and finished with a drizzle of honey.  Simple but so good. These Baked Figs are a wonderful starter for a summer and early fall meal.  Summer feel like it is slipping away and I want to savor each day left. You have a few more days to enter the In Home Global Cooking Party.  Here is how to enter. [...]

Mango Goat Cheese Quesadillas

Mango Goat Cheese Quesadilla

This weekend seemed to go by in a  blur.  On Saturday we raised over $2300 at the National Food Blogger Bake Sale.  Raising money to end childhood hunger, the bake sale was part of Share Our Strengths Great American Bake Sale.  The Los Angeles  salewas held at BLD restaurant and the place was jam packed with people eager to buy the goodies. I had the chance to meet other local food bloggers.  There were chocolates by La Fuji Mama and Anzac cookies by A Communal Table.  Gaby made Salted Chocolate Cookies and Matt brought a cherry pie.  I had the [...]

Rosemary Thyme Pita Chips

Bowl of pita chips

I made these Rosemary Thyme Pita Chips for my Oscar party a few weeks ago.  I saw the recipe on Food 52 and knew this would be a good one. The honey coated pita sprinkled with fresh herbs and sea salt makes for a crisp and tasty chip. You can play around with it.  I was thinking a bit of red pepper might be nice.  Serve with some cheese for a pre dinner appetizer.  This is a recipe that would be great to do with kids.  Let them brush on the butter and honey and then sprinkle the herbs.  You [...]

Thai Chicken Pizza

Thai chicken pizza

Each month a group of my friends have been gathering to talk about social media.  Each of us has projects we are working on.  One designs clothes, another designs invitations, a few of us blog and one is in real estate.  It has turned into a rich evening of sharing with friends.  We hold each other accountable to our goals for the next month and can bring issues for input from our group. This month I hosted and decided to make an old favorite, Thai Chicken Pizza.  I didn’t have much time to pull dinner together and I improvised using [...]

Roasted Red Pepper Soup with Puff Pastry and a Giveaway

I’ve been serving up sweet after sweet here and thought it might be time to take a break from Holiday Baking. Today I am serving up a delicious Roasted Pepper Soup with Puff Pastry. Years ago I visited Domaine Chandon in Napa and had this amazing dinner that started with a Tomato Soup topped with puff pastry.  It was one of my most memorable meals.  A few months ago at The Bistro Jeanty, their tomato soup tasted familiar to me.  Looking up the recipe it turns out the chef that created the soup at Domaine Chandon later opened up Bistro [...]

Food, Family and a Thankful Heart

Cranberry Cream Cheese

Thanksgiving is my favorite holiday.  There is nothing better than gathering with those you love and sharing a wonderful meal.  Family meals are a chance to deepen relationships and share our lives. Lingering around the table opens up opportunities to relax and talk.  No one is hurried, the cooking is done and we can enjoy the moment. A few nights ago I was hanging out with my niece and nephews.  I asked Livi what she was thankful and she rattled off every little thing she was thankful for.  In detail [...]
