Day 7: Begin Your Day Right {Baked Banana Bread Oatmeal}

It is National Oatmeal Day and this Baked Banana Bread Oatmeal is the perfect way to celebrate! I always wonder who makes all these days up! I had high hopes for 30 Days but living in a hotel for 2 months has done me in. More about that tomorrow. I am going to continue to finish it up and will link up to the final products but starting Friday we will move on.

I made this Baked Banana Bread Oatmeal last week when we had a surplus of bananas. It is one of my favorite new ways to start the day. Breakfast is important. It fuels our body for the day. Baked oatmeal is good because it reheats well and this bowl was enough for two mornings!

When I lived in Corona del Mar, a little beach town in Southern California, there was a breakfast spot that served oatmeal topped with bananas and this killer cinnamon toast. Friends would meet up for breakfast and then walk down to the beach. This oatmeal took me back to many fun mornings hanging out with friends, sipping coffee and running into so many people we knew from church.

Day 7: Begin Your Day Right {Baked Banana Bread Oatmeal}

Ingredients

  • 1/3 cup old fashioned rolled oats
  • 1 teaspoon brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp baking powder
  • pinch of sea salt
  • 1/3 cup fat free milk
  • 1/3 cup mashed ripe banana, about 1 medium banana
  • 1 egg white
  • 1/2 tsp pure vanilla extract
  • maple syrup for serving, optional
  • chopped toasted pecans for serving, optional
  • 1/2 cup fat free Yoplait Greek Yogurt - Vanilla, optional

Instructions

  1. Preheat oven to 350°F. Lightly butter 4 small ramekins.
  2. In a small mixing bowl, whisk together oats, sugar, cinnamon, baking powder, and salt.
  3. Whisk together milk, mashed banana, egg white, and vanilla extract in a medium mixing bowl.
  4. Pour dry ingredients into wet and stir until combined. Pour mixture into prepared ramekins.
  5. Bake for 20 minutes, or until oatmeal is puffed and set.
  6. Serve warm with yogurt, maple syrup and/or pecans.
