National Food Bloggers Bake Sale and Homemade Cracker Jacks

What do you get when you combine a cause and a group of food bloggers? A bake sale for a cause. 

Do you live in Southern California? Join me and other Southern California food bloggers at the National Food Bloggers Bake Sale this Saturday. Started last year by Gaby of What’s Gaby Cooking, the money raised goes to Share Our Strength to end childhood hunger.

Every cookie sold and every dollar donated can make a huge impact. Here are some examples:*
$1 can help provide a hungry child with 10 healthy meals.
$4 can help provide a child facing hunger with a backpack full of healthy food over a weekend when school meals are not available.
$9 can help connect a child with healthy lunches during summer when school is out.
$35 can help a child care center provide free afterschool snacks and suppers to at-risk children all year long.
$65 can provide a grab-n-go breakfast cart to an elementary school so that every student starts every school day with a healthy meal.

Today I will be baking Pie Pops and Cake Batter Rice Krispy Treats. I don’t have those cooked up yet but here is a recipe to share for today. I made the most delicious Homemade Cracker Jacks. I found a great recipe on the Amateur Gourmet. Cook up a bag and bring some with you to the baseball park.I would love to meet you – stop by if you can and share with your friends. Homemade Cracker Jacks

Prep time: 10 minutes Cook time: 40 minutes Total time: 50 minutes Yield: 3 quarts

Ingredients

  • 1/2 cup butter
  • 1/4 cup corn syrup
  • 1/4 teaspoon baking soda
  • 1 cup brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla
  • 3 quarts popcorn
  • 1 cup peanuts

Cooking Directions

  1. Heat your oven to 250F. Melt the butter, stir in the corn syrup, sugar and salt. Bring the mixture to a boil stirring constantly. Boil without stirring for 5 minutes.
  2. Remove from the heat, stir in the soda and vanilla (Careful! it foams!). Pour over the popped corn and mix well.
  3. Spread the coated corn into large cake pans and bake for 40 minutes, stirring every 10 minutes. At 30 minutes stir in peanuts and return to oven for 10 minutes. Let it cool and eat! You can add peanuts or any other nuts if you like.
