Roasted Peaches

Tomorrow is August 1, where has the summer gone? I spent last weekend at the San Diego Comic Con. I am telling you, the people watching doesn’t get any better than that place. Where else can you see grown adults and their children dressed as their favorite super hero mixed with the stars of your favorite sci fi show or movie.

Because I have been frittering away my time at places like that I have not been in my kitchen much. Yesterday I went to a local  farmers market for some inspiration.
The abundance of summer fruits is at its peak right now. Peaches were at every stand and last year I discovered the wonders of roasting them. I picked up a bag and roasted a few last night.

Roasting them brings out a smooth sweet flavor. The mascarpone adds a creamy richness to the dish.

Roasted Peaches with Honey Mascarpone Cream
2 servings

2 peaches, halved and pitted
2 tablespoons butter, softened
2 tablespoons dark brown sugar
1/2 cup mascarpone cheese
2 tablespoons honey
1/2 cup Blackberries

Preheat oven to 350F.

Mix the butter and brown sugar together to form a paste.

Place the peach halves, cut side up, in a baking dish. Place a large spoonful of the brown sugar mixture into the center of each peach half.

Put the dish in the oven and bake for 30 minutes.

Mix the mascarpone cheese and honey together.

Place two roasted peaches in a bowl and top with a large spoonful of the marscapone cheese mixture. Top with blackberries.
