Summer is full of fresh vegetables and fruit. There are so many options that are both simple and fresh. Corn is one of my favorite summer treats. I love fresh sweet corn right off the cob. It is great in salads and this is one of my new favorites. The tangy jalapeno lime vinaigrette with the sweet corn is amazing.
I am bringing this our family get together for the fourth of July. What will you be serving?
Corn Salad with Jalapeno Lime Vinaigrette
4 ears of sweet corn, husked and silk removed
1/4 cup red onion, small diced
1-2 tbsp coarsley chopped cilantro (optional)
Vinaigrette
1/2 jalapeno, seeded and coarsley chopped
1/4 cup lime juice
2 teaspoons honey
1/4 teaspoon cumin
1/4 cup canola oil
Kosher salt & freshly ground pepper
