Two years ago I was in Italy around this time of year.  A group of friends went to stay in a villa in Tuscany.  Ok, villa makes it sound so grand.  Maybe a bit grander than the house really was, but it was Italy. Corn Salad with Jalapeno Lime Vinaigrette

Summer is full of fresh vegetables and fruit.  There are so many options that are both simple and fresh.  Corn is one of my favorite summer treats.  I love fresh sweet corn right off the cob.  It is great in salads and this is one of my new favorites.  The tangy jalapeno lime vinaigrette with the sweet corn is amazing. I am bringing this our family get together for the fourth of July. What will you be serving?
