Strawberry Strawberry Cheesecake

I don’t know what it is like where you live but we have growers selling fresh strawberries on the roadside.  They are in season right now. I love having fresh strawberries on cereal or hot oatmeal.  In the evening they are great served with fresh ice cream. I have not been in the kitchen very much because I have been distracted by a new member to my family, Max, an 11 week old Yorkipoo.  I promise to focus and get back to cooking this weekend! In the meantime here is a Strawberry Cheesecake bursting with strawberries. They are used both [...]

Buttermilk Cranberry Scones and a Winner

Thank you all for participating in my Cookbook GIveaway.  The winner is Maggie, go by and congratulate her on her win! I have had to postpone the final giveaway until next Monday, so check back then for the Kids Cooking Giveaway! Today I bring you Buttermilk Cranberry Scones.  I discovered these one evening when I was in need of a recipe for a birthday celebration for my friend Liz, the next morning.  Pinch My Salt had this recipe on her site.  These are moist and full of flavor.  The lemon is a great pairing with cranberries. It was a lovely [...]

Honeyed Yogurt Blueberry Tart with Ginger Crust

3464639179_3f681c7d41

Don’t forget to enter the Cookbook Giveaway! Searching for delicious and low calorie food to make I discovered this amazing and simple Honeyed Blueberry Tart with Ginger Crust. I brought this to Easter as a low fat alternative. Your guests will not believe this only has 134 calories in it.  The ginger is a bit strong so you might want to cut back on it if  you don’t love ginger. Trader Joe’s has crystallized ginger most days.  I haven’t tried but I bet you could make the crust without it. Drain the yogurt overnight by placing it over cheesecloth in [...]

Garlic Snap Peas

Don’t forget to enter the Cookbook Giveaway! I love peas.  I know not everyone out there is a fan of peas but I have since I was a kid.  Each Saturday I would go with my mom to the grocery store.  If fresh peas were in season I would fill up a paper bag with them.  Once I got home I eat them raw.  When they are in season they are sweet and tender. Over the years I discovered the virtues of snap peas and snow peas.  On salads and in a stir fry; steamed served with a bowl of [...]

Pasta Peperonata

I couldn’t wait to share my new favorite pasta dish with you. A few weeks back I had a friend staying with me for a few days. On Sunday night I served Pasta Peperonata for dinner and it was delicious. Sunday night dinners are my favorite. There is something casual about dinners on Sunday night. The weekend is winding down and it is the perfect time to hang out with family and friends. Many years ago I lived in an apartment behind the beach house of a friend of mine. Many Sundays you would find us trying new recipes with [...]

Tortilla Soup

Don’t forget, today is the last day to enter the BBQ giveaway contest. The picture does not do this soup justice.  I had found that soup is just a great standby, even once the chill thaws a bit. I kept seeing recipes for tortilla soup and finally decided to give it a try. I have a chicken tortilla soup that  is one of my favorites but I found myself tempted each time I saw one of these recipes. This soup is healthy, spicy and full of flavor. If you make the baked chips you get the low cal version but [...]

Arugula, Grapefruit and Fennel Salad

I found the tastiest new vinaigrette to share with you.  Cooking for my blog has added a few more pounds I really did not need.  A few photographs made me rethink what I am serving up.  I decided to put my cooking skills to good use and mix up some healthier and lighter meals.  You might notice a few more light recipes than usual.  Hopefully you won’t mind.  Summer is coming after all. The mix of arugula, grapefruit and fennel is crisp and packed with flavor.  The vinaigrette is sweet, tart and very smooth.  It is a great pairing with [...]

This [...]

Lemon Ricotta Cookies

Happy Easter!  I am looking forward to a day with family and filled with Easter egg hunts. One night last week I could not sleep. After tossing and turning around 5 am I gave in and got up. Down in the kitchen making coffee I decided to make these cookies as a gift to my small group leaders at church. Cooking for me is calming.  I can clear my head while whipping up some goodies. These cookies had caught my eye a few weeks ago. They seemed like the perfect spring dessert.  I used the  Meyer Lemon’s I had left [...]
